Sweet Potato Nests

Sweet potatoes are on sale this week at my local grocer and I have been cooking up a storm with them! I’ve been experimenting with different uses for sweet potatoes other than the typical roasted cinnamon sweet potatoes. I am absolutely in love with sweet potatoes as a delicious breakfast option and have created these adorable – and satisfying – sweet potato nests.

For some reason, I was under the impression that grating a sweet potato (or any potato) would be a lot of work. If I’ve said anything at all during my escapades into becoming a better cook, it’s that I am not interested in cooking anything that’s difficult or has extra steps. To my amazement, grating the sweet potato was easier than grating cheese – and I truly mean that.

While this recipe could also be made by grating a regular potato, I chose a sweet potato for it’s added Vitamin A and Vitamin C benefits. These vitamins help boost your immune system which is so important during this cold and flu season.

My other concern when first trying this recipe was how the sweet flavour of a sweet potato would pair with an egg. I wasn’t sure I was going to enjoy that flavour combination. To my pleasant surprise again, seasoning the grated sweet potato with garlic powder, salt and pepper gave it a savory taste that paired beautifully with the egg in the middle.

For some added joy, sprinkle the egg with 2 tablespoons of shredded cheese. This really brings the whole dish to the next level. (And really, who doesn’t love cheese?)

Recommended Tools for This Recipe

  • Oven Safe Pan – I used a mini oven safe saucepan
  • Grater

I absolutely love this fun recipe because my daughter loves it too! She has always loved “orange potatoes” but turning them into a little nest makes having all the added nutrients of a sweet potato more fun.

Sweet Potato Nests

A quick and easy, delicious fun way to enjoy your sweet potatoes and eggs!

Ingredients

  • 1/2 medium sweet potato washed and peeled
  • 1 large egg
  • 1/2 tbsp extra virgin olive oil
  • 1/4 tsp fine sea salt
  • 1/4 tsp garlic powder
  • black pepper to taste
  • 2 tbsp shredded cheddar cheese optional

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Grate the sweet potato.

  3. In a small pan, add the 1/2 tbsp of extra virgin olive oil and saute the grated sweet potato. Sprinkle the sweet potato with the salt, pepper and garlic powder. Continue to cook until slightly crisp. Form into a nest.

  4. Crack the egg into the middle of the nest. Give the egg a moment to settle into the nest. 

  5. Sprinkle the egg with a little more salt and pepper to taste.

  6. Place the oven safe pan in the oven for 5-8 minutes, depending on your preference for the egg yolk. 5 minutes will be more runny. 

  7. Once done cooking, optionally sprinkle the nest with the shredded cheddar cheese.
