Muffins are one of my favourite go to snacks. Quick and easy to make, perfect for grabbing and eating on the go, they seem like the perfect afternoon snack. The only issue I have with muffins is the calories and sugar. This is why I’ve worked to create low calorie, naturally sweetened muffins like this blueberry greek yogurt muffin.

If you’ve been on Fit and Frugal Mommy before, you know that I have a little bit of a sweet tooth and my weakness is undoubtedly chocolate. However, not everyone shares this same weakness – like my husband – who would prefer a muffin with fruit over chocolate chips. (He’s crazy).

This recipe calls for 2 1/2 tablespoons of pure maple syrup. This will make the muffins fairly sweet. I’ve made them with 2 tablespoons of maple syrup which is sweet enough for my husband and 3 tablespoons which is my preferred sweetness. I’ve met in the middle to create a moist, sweet and delicious blueberry greek yogurt muffin. For only 81 calories a muffin – I know, jaw dropping – this is a snack you can enjoy without regret.

If you can’t tell, I have a little bit of an obsession with greek yogurt muffins. Greek yogurt is probably one of the most versatile ingredients in my kitchen. Not only does it make muffins, it also makes my skinny spinach dip and my personal favourite, two ingredient dough pizza. It’s an ingredient I buy every week without fail.

Blueberry Greek Yogurt Muffin

A deliciously moist, naturally sweetened blueberry greek yogurt muffin.

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Servings 10 muffins
Calories 81 kcal

Ingredients

  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1/2 cup plain greek yogurt
  • 1/3 cup unsweetened apple sauce I use the prepackaged snack size containers
  • 1 cup all purpose flour
  • 1/2 cup liquid egg whites
  • 2 1/2 tbsp pure maple syrup
  • 1/2 cup frozen blueberries
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 375.

  2. Add the flour, salt and baking powder to a mixing bowl. Mix together. 

  3. To the same bowl, add the greek yogurt, maple syrup, vanilla, egg whites and apple sauce. Mix together until smooth. 

  4. Add the blueberries, folding them into the batter.

  5. In your non-stick muffin tray, split the batter into 10 equal size muffins. This will make 10 full size muffins. 

  6. Bake for 15 minutes or until cooked through.
