Slow Cooker Salsa Chicken

A delicious, hearty meal that's easy to prepare and low on calories.

Ingredients

  • 1 cup plain greek yogurt
  • 1 cup salsa
  • 2-3 boneless chicken breasts
  • 1 can low fat mushroom soup
  • 1/2 pkg low sodium taco seasoning
  • 1 cup diced tomatoes drained

Instructions

  1. Place the chicken breasts in the slow cooker.

  2. Sprinkle 1/2 of the package of low sodium taco seasoning over the chicken breasts.

  3. Add the salsa, diced tomatoes and cream of mushroom soup to the slow cooker. Stir together.

  4. Cook on low for 7-8 hours.

  5. When cooking is complete, use two forks to shred the chicken.

  6. Add the cup of plain greek yogurt and stir into the mixture.

  7. Serve over rice. For a low carb meal, serve over zucchini noodles. Optionally sprinkle with shredded cheddar cheese.
