A low smartpoint, low calorie breakfast recipe.
Heat your non-stick pan on low-medium heat.
In a blender, mix the banana, egg and vanilla extract until smooth.
Pour the mixture into a bowl and add the kodiak cake mix and cinnamon to taste.
Spray the pan with cooking spray and pour in the pancake batter. Makes 3-4 pancakes depending on the size of the banana.
Once the pancakes begin to form bubbles and appear slightly cooked, flip them to cook the other side, about an additional 2-3 minutes.
When cooked, optionally top with fresh fruit, light whipped cream and syrup.
