Banana Protein Pancakes

A low smartpoint, low calorie breakfast recipe.

Ingredients

  • 1 whole banana
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp kodiak cake mix
  • cinnamon to taste

Instructions

  1. Heat your non-stick pan on low-medium heat.

  2. In a blender, mix the banana, egg and vanilla extract until smooth.

  3. Pour the mixture into a bowl and add the kodiak cake mix and cinnamon to taste. 

  4. Spray the pan with cooking spray and pour in the pancake batter. Makes 3-4 pancakes depending on the size of the banana.

  5. Once the pancakes begin to form bubbles and appear slightly cooked, flip them to cook the other side, about an additional 2-3 minutes.

  6. When cooked, optionally top with fresh fruit, light whipped cream and syrup.
