Ingredients

  • 1 cup fat free plain greek yogurt
  • 2 tbsp unsweetened cocoa powder
  • 1/4 cup skim milk
  • 2 tbsp water
  • 1 tsp vanilla extract
  • 1/4 cup Monkfruit/Erythritol blend or other sugar substitute*

Instructions

  1. In a bowl, mix together the plain greek yogurt and unsweetened cocoa powder. Mix well. It's important to mix these two ingredients first or the cocoa powder does not mix in as smoothly.

  2. Mix in the skim milk, water, vanilla extract and monkfruit/erythritol blend. Mix until smooth.

  3. Place in a container in a thin layer and freeze for one hour or until ice cream consistency achieved.

  4. Optional: Top with light whipped cream (highly recommended), fresh fruit or unsweetened coconut.

Notes

This dessert is best served once the greek yogurt has frozen to ice cream consistency. When left in the freezer over night, the greek yogurt will freeze solid. When this happens, I take out the ice cream about an hour before I would like to enjoy it and keep it in the fridge.

* If using another sugar substitute, be sure to use the quantity that will match 1/4 cup of table sugar. Monkfruit/Erythritol is a 1:1 ratio, other sugar substitutes may not be.
