I am a lover of all things chocolate. When pregnant with my son, I had chocolate every day. I’m also a lover of peanut butter (Reese’s Pieces are my one love). These gluten free peanut butter chocolate cookies really satisfy my cravings and hit the spot!
I love these cookies because they are made with things I always have in the cupboard. I chose to make these cookies with a little bit of Nutella for an added chocolate kick in the dough. It’s totally optional, and they are delicious either way!
I am all about gluten free recipes right now. I do not have a gluten insensitivity but I have noticed that my body seems less bloated and feels better when I am eating a lower carb diet and eliminating gluten in some of my meals. If I can get rid of white flour in a recipe, sign me up!
I absolutely love to mix up a batch of these when my daughter and I are craving something sweeter. It’s a great activity we do together that she’s excited about. She loves to bake with mom and I love any excuse for a cookie in the afternoon.
Let’s get baking!
Gluten Free Peanut Butter Chocolate Cookies
A delicious gluten free treat to satisfy your chocolate cravings!
Mix the Nutella, egg, oats, peanut butter, baking soda and brown sugar in a bowl.
Fold in the mini chocolate chips.
Chill the dough for 30 minutes in the refrigerator.
Roll the dough (1 heaping tbsp) into balls and place the dough on a baking sheet covered in wax paper.
Bake at 350 for 9 minutes. This will make very soft, chewy cookies! For crunchier cookies, bake for 11 minutes.
Prep time includes time to chill the dough.
